Calamari Po' Boy Sandwich with Spicy Anchovy May Sauce

Calamari Po' BoyANCHOVY MAYO:

2 cans anchovies, drained
1 teaspoon cayenne pepper
1/4 cup red wine vinegar
2 egg yolks
1/4 cup olive oil
Juice of half a lemon
Combine all ingredients except olive oil, in a food processor. Drizzle in the olive oil in a steady stream while food processor is running.
Washed calamari rings
Egg wash (egg& milk)
Seasoned bread crumbs
1/2 teaspoon cayenne pepper
1/2 teaspoon Old Bay Seasoning
Hoagie rolls
Shredded lettuce
Combine bread crumbs, cayenne pepper, Old Bay into a Zip Lock bag. Dredge calamari rings into egg wash then in bread crumbs. Deep fry at 350 degrees until golden brown, and then construct sandwich with calamari, anchovy, mayo and lettuce.
